    Curcumin is a chemical component extracted from the roots of some plants in the family Zingiaceae and Araceae. Among the above several pure natural plants, curcumin contains about 3%-6%. It is a rare pigment with diketone in the plant kingdom and is a diketone compound. Curcumin is orange yellow crystalline powder, taste slightly bitter. Insoluble in water. In food production, mainly used for intestinal products, canned, sauce and brine products and other products coloring.

    Physical properties: Curcumin is an orange yellow crystalline powder, melting point 183°. Curcumin is insoluble in water and ether, but soluble in ethanol and glacial acetic acid. Curcumin is orange yellow crystalline powder, taste slightly bitter. Insoluble in water, soluble in alcohol, propylene glycol, soluble in glacial acetic acid and alkali solution, when alkaline is reddish brown, when neutral, acidic yellow. The stability of reducing agent is strong, strong coloring (not to protein), once the color is not easy to fade, but light, heat, iron ion sensitive, light resistance, heat resistance, iron ion resistance is poor. Since curcumin has two hydroxyl groups at both ends, the conjugate effect of electron cloud deviation occurs under alkaline conditions, so when PH is greater than 8, curcumin will turn from yellow to red. Modern chemistry USES this property as an acid - base indicator.

    Identification test:
    Solubility: Curcumin is insoluble in water and ether; Soluble in ethanol and acetic acid. The method was determined by OT-42. The melting range is 179 ~ 182℃。

    It is measured by conventional method:
    The ethanol solution of sample A should be pure yellow and have light green fluorescence. If the ethanol extract is added to the concentrated sulfuric acid, it will produce a deep purple. Chromogenic reaction B treated aqueous solution or dilute alcohol solution with hydrochloric acid until slightly orange at first.
    The mixture was divided into two parts, and a small amount of boric acid powder or crystal was added to one part, which turned red significantly compared with the part without boric acid. Several pieces of filter paper can also be soaked in ethanol solution of pigment, dry at 100℃, and then wet with boric acid dilute solution (add a few drops of hydrochloric acid). When dry, it should be cherry red.

    Chromatography.:
    5ml of curcumin test solution (0.01g sample dissolved in 1ml 95%ethanol) was dropped onto thin layer chromatography (microcrystalline cellulose, 0.1mm) and placed in an expanding tank containing the mixture of 3-methyl-1-butanol/ethanol/water/ammonia (4:4:2:1) to increase the solvent frontier by 10 ~ 15cm. After one day and night observation under ULTRAVIOLET light, there were three yellow spots with Rf between 0.2 and 0.4. Rf of other spots was 0.6 ~ 0.8; All spots fluoresce yellow in ULTRAVIOLET light. The maximum absorption peak was found at 425nm for 6.95% ethanol solution.

    The main use of curcumin:
    1、 Curcumin can be used as an edible yellow pigment. Curcumin is commonly used in the coloring of beverages, candies, pastries, intestinal products, dishes, sauces, tins and other foods, as well as cosmetics and pharmaceuticals. Curcumin has long been used in radish and curry powder in China. Curcumin can also be used in pickles, ham, sausage, and in sugar-soaked apples, pineapples, and chestnuts。
    2、 Curcumin can be used as an acid-base indicator and is yellow at PH 7,8 and reddish-brown at PH 9.2。
    3、 Turmeric is often used in food, dishes, pastries, candy, canned drinks, cosmetics, medicine coloring.
